“Vegetarian Crab Cakes are a delicious alternative to the popular fishcake.”


Vegetarian Crab Cakes

Ingredients

  • 4 cups hearts of palm
  • 1 ⁄ 2 cup finely chopped scallions
  • 1 tbsp. Old Bay seasoning
  • 1 tbsp. toasted ground nori
  • 1 tbsp. Dijon mustard
  • 1 cup drained chickpeas
  • 1 1 ⁄ 2 cup Vegenaise
  • 1 ⁄ 4 cup lemon juice
  • Salt and pepper to taste
  • 6 cups panko bread crumbs or gluten free crumbs

Preparation

  1. Cut hearts of palm in 1 ⁄ 2 inch chunks
  2. Purée Vegenaise and chickpeas until smooth
  3. Combine all ingredients and portion, and voila!!!
  4. Pan sear and enjoy
